In the novel, Wells states the Martians have no digestive system---they only drink the blood of human victims. However, he mentions on several occasions of finding human skeletons who are Martian victims, including several in the pit after he emerges from the wrecked home/cylinder crash site. Am I wrong in assuming the skeletons were not eaten by the Martians but perhaps were eaten by other predators such as dogs, etc., after the bloodless bodies were left by the Martians? (I apologize if this is been brought up before).

I would also assume, as you say, that the skeletons had been picked clean by dogs, birds and the like after the Martians had drained the blood.
